歷史 The troubled historical situation of this region has left deep scars that time has not yet healed. In history, Molise was part of a Roman region together with Abruzzo. Later, this territory became the land of the Samnites; conquered by the Lombards, Saracens, Byzantines, and later a land of Frederick II. It was then that the name Molise took hold, as the Counts of Molise prevailed among the various fiefdoms into which it was divided. Later, it was hit by an economic and social collapse which continued even after the annexation to the Kingdom of Italy, where Molise together with Abruzzo formed a single region. In 1963, Molise split from Abruzzi to become independent.

First courses include the typical maccheroni alla chitarra served with a lamb and pepper ragout, or with fresh tomatoes and the ever-present chilli pepper, and fusilli, rolled rectangular pasta.
