Still white wine from Collio in Friuli-Venezia Giulia, 13.5% ABV, produced by Venica. 100% Sauvignon, 2024 vintage. A Sauvignon that embodies the freshness and complexity of Collio, with an aromatic bouquet that heralds an unforgettable tasting experience. The grapes were harvested and destemmed between August 22nd and 24th, then macerated for 18–20 hours at a temperature of 10–12°C in special containers, protected from oxygen with innovative systems that recycle the fermentation carbon dioxide to reduce the presence of oxidants. 10% of the must ferments and ages on the lees for 6 months in large wooden vats (20–27 HL), the remainder in stainless steel tanks. Bottle aging coincides with the full moon between late March and May. The nose is marked by aromas of gooseberry, bergamot, guava, passion fruit, blackcurrant leaf, boxwood, and calamint, with hints of minerality. The palate is clearly consistent, fresh and savory, balanced and persistent.
