Valpolicella Classico Superiore 2010 is a DOC wine produced in Veneto by Giuseppe Quintarelli's renowned winery, located on the first hills of Negrar, 350 meters above sea level. The moderately continental climate typical of Valpolicella and the predominantly calcareous soil give the wine its organoleptic characteristics. The grape varieties used to produce this still red are Corvina, Molinara, and Rondinella. Corvina is a red grape variety native to the Veneto region and has a moderate, regular productivity. Molinara is a native grape variety of the Veneto region, whose dark red/purple grapes have a thick, very pruinose skin. Rondinella is a particularly hardy grape variety, also native to the Veneto region. It produces compact, pyramid-shaped bunches of blue/black grapes with thick, very pruinose skins. The Valpicella climate is characterized by cool winds from the Lessina Valley, which favor viticulture. These winds cool summer nights, facilitating temperature swings that positively influence the aromatic ripening of the grapes. The vinification process begins with the harvest, which is carried out strictly by hand, for a careful and meticulous selection of the bunches, placed in small wooden crates. The grapes are then subjected to light pressing, maceration for 2 months, and spontaneous alcoholic fermentation, with the use of native yeasts, for 7/8 days. The subsequent refinement phase, which lasts 6 years, takes place in large Slavonian oak barrels.
