| 酿酒工艺 | The harvested grapes are partly fed directly into the presses and partly, after being destemmed, are sent to a thermo-conditioned tank, where they rest for about 12 hours at a temperature of 5 °C, undergoing a brief cryomaceration. A very gentle pressing programme allows only the free-run juice to be extracted from the grapes, which is left to decant cold, separating it from the solid part present in the must. Fermentation starts when the temperature reaches 18 °C and is stopped when 3 degrees alcohol is reached. |
