The company is based in the original building of the Cantina Bellei, built by Christian’s great-grandfather on the banks of the Naviglio di Bomporto canal, near the 18th-century dock, where boats would perform la volta (‘the turnaround’) before setting sail once more to return back to the city of Modena. 酿酒工艺 | Our Lambrusco di Modena Spumante D.O.C. is obtained from a selection of the best Sorbara grapes entirely gathered in small cases (17 kg. max) by manual harvesting. The grapes are carefully handled in order to prevent them from crushing during transportation to the winery. The pressing activity respects serious batching criteria. The must is submitted to clarification followed by alcoholic fermentation into controlled temperature stainless steel tanks. After remaining at least six months inside the tanks for maturation process, the wine receives selected yeasts, prior to being bottled. |
陈酿 | Then it undergoes the secondary fermentation process kept horizontally, for a long maturation period of 36 months, in a constant ambient temperature of 12°C. The following steps are remuage, disgorgement and liqueur d’expédition addition. |
