Antinori Tomaresca Castel del Monte Pietrabianca is a wine produced in Bocca di Lupo, on an Apulian estate founded and managed by the Antinori family. The name derives from the white stone, a building material found in large quantities in Puglia. The wine is made from native Apulian vines: Chardonnay and Fiano grapes, a small portion, fermented in wood and steel, respectively. Antinori Tomaresca Castel del Monte Pietrabianca is a Chardonnay obtained from the soft pressing of the grapes, which are then left to rest in stainless steel tanks at 10°C. The Chardonnay is then placed in oak barriques, where it ferments at a controlled temperature, finishing the process on the lees. The Fiano, on the other hand, undergoes fermentation in stainless steel, at 16°C, to enhance its acidity. The wine finishes its aging in the bottle for a period of 5 months. The contrast between the two different maturations makes the wine perfectly balanced, as it is a combination of the full flavor of the wood and the freshness of the grapes vinified in steel.
