Sauvignon Zuc di Volpe is a white wine made from 100% Sauvignon grapes. The vineyards are located on the Eastern Hills of the Friuli Venezia Giulia region, and the wine has obtained the Colli Orientali del Friuli DOC designation. The "Zuc di Volpe" line is the pinnacle of the production of the ancient Volpe Pasini winery owned by the Rotolo family, who select only the most intact grapes to create this bottle and vinify them separately. The result is a light and well-balanced wine. The Sauvignon grape variety is widespread. In Italy, it is grown mainly in Veneto, Friuli Venezia Giulia, Alto Adige, Lombardy, and Emilia Romagna. The high quality of Sauvignon Zuc di Volpe has won numerous awards at the national and international level over the years. It has won the "Gambero Rosso" 3 glasses, the "Italian Sommelier Association" 4 vines, and the "Bibenda" 5 bunches. The Sauvignon Zuc di Volpe is made with white Sauvignon grapes. The grape variety is of French origin, and the name "sauvage" means wild. The grapes are harvested by hand, but the harvest, in the last ten days of September, is very quick. The fruit is placed in special baskets and immediately cooled with carbon dioxide. Subsequently, reduction presses replace the oxygen with argon gas, and the long fermentation takes place in stainless steel tanks where the temperature is controlled to 10°C. Once the right alcohol content is reached, the wine refines its organoleptic characteristics not in wooden barriques but in the bottle. Sauvignon Zuc di Volpe is not filtered in order to leave its aromas of noble vegetables and tropical fruit intact.

The estate covers the area of the Colli Orientali del Friuli. The heart of the company consists of a manor house, whose original structure dates back to 1596, and a complex of buildings that surround it. Within the grounds of 20000 square meters are also the park and a small vineyard Ribolla Yellow wine that recalls the vocation of the company. The factory architecture dates from the sixteenth century, but we must get to the next century to find the first documents testifying with certainty wine production on the property.
