Harvest period in late Autumn in sunny and windy Alghero. The grapes are harvested after their initial herbaceous character has faded.

Fermentation About 3 weeks.
Wine making The harvested grapes are destemmed, crushed for 4-5 days and macerated at a temperature of 15°C. Fermentation takes place at 20°C for about 3 weeks, followed by malolactic fermentation, which is completed by Autumn.
