Moscato d'Asti Biancospino is a sweet DOCG wine produced by the La Spinetta winery, owned by the Rivetti family. The pure grape used is Moscato, whose cultivation has ancient roots dating back to the 14th century. It is produced in Piedmont, which, with its typically continental climate, characterized by cold, humid winters and hot, dry summers, is not only the leading producer of the Moscato grape but also the designated land of origin par excellence for this highly fragrant and aromatic wine. The medium-large berries, round and slightly flattened in shape, have a thin skin, while the pulp has a sweet and fragrant flavor. Its production is regular and it is characterized by excellent resistance to both periods of dryness and periods of intense cold. Moscato d'Asti Biancospino is produced in Castagnole Lanze, Piedmont, a typical Moscato d'Asti area. Furthermore, the calcareous, sandy soils where the entire production takes place and the breezy, dry climate allow this grape variety to produce the best results. The grapes are harvested entirely by hand, using small perforated crates to keep the grapes intact. The subsequent vinification process takes place in hermetically sealed stainless steel tanks, sophisticated and technologically advanced, allowing constant monitoring of the fermentation process and the temperature, which must be maintained at 15°C. Fermentation lasts approximately 4 weeks, after which the wine is ready to be bottled and sold.
