酿酒工艺 The grapes are picked exclusively by hand and immediately taken to the wine factory where they are quickly destemmed and softly crushed to extract only the noble must and aromatic fractions from the skin and the outermost part of the grape. Fermentation takes place at a controlled temperature in thermo-conditioned tanks. Periodic pump-overs allow the must to appropriately gather all the trace elements in the skins and gently extract the colour. The racking takes place at the end of fermentation.
