Still red Chianti Classico Gran Selezione, 14.5% ABV, produced by Colombaio di Cencio. 100% Sangiovese, 0.75 l bottle, 2020 vintage. A wine born in the heart of Chianti Classico, in Gaiole in Chianti, from Sangiovese grapes grown with passion and respect for nature. Aged for approximately 30 months in previously used barriques and tonneaux, this wine boasts unique complexity and elegance. On the nose, it presents notes of ripe red fruit, plum, with hints of vanilla and spice. Intense ruby red color. On the palate, it is enveloping and elegant, balanced yet lively with sweet, silky tannins. The finish is long and persistent. Perfect with red meats, game, and aged cheeses.

Colombaio di Cencio was founded in 1993 by Werner Ernest Wilhelm, a German entrepreneur who was inspired by the beauty of the hills surrounding Gaiole in Chianti (Tuscany) and decided to establish a farm.

As a result, he transformed a rural cottage surrounded by woods into a winery where tradition and modernity coexist peacefully.

The vineyards are divided into three distinct areas within the municipality of Gaiole in Chianti: Cornia, Montelodoli, and Vinci.

The differences between these areas are due to the pedoclimatic characteristics of the areas as well as the type of grapes grown.

土壤成分 The soil that distinguishes this wine has been characterised since its formation from the Chianti massif by a high limestone compactness resting on a sandstone base. This type of soil restrains the vigour of the vines and lengthens the vegetative cycle and enhances the structure of the Chianti. Facing south-south-west, a slope characterised by cool winds with an amphitheatre shape.
收获 End of September, first days of October. Harvest carried out exclusively by hand with selection of the best Sangiovese grapes and rapid transfer to the cellar for destemming without crushing.
酿酒工艺 Vinification in stainless steel tanks at controlled temperature for 21 days, with submerged cap post-maceration for 2 months. Racking and pressing.
