酿酒工艺 The grapes are pressed and fermented with fast maceration of approximately 2 hours, obtaining the base rosé wine (rosé saigne). Proceed with the assemblage of base wines in the winery in Beaune, followed by the addition of tirage liqueur and sugar with natural yeasts. Foam outlet in stainless steel tanks with rapid aging 'sur lie' for 2 months (short Charmat process). Cooling, adjustment of the level of sugar (total final dosage 13g / l), isobaric centrifugation and filtration. Bottling.
