土壤成分 The soils are produced by the alteration of calcareous-fossiliferous formations, in particular red flake and biancone.
收获 The harvest takes place in several stages during the last two weeks of September to allow the grapes to ripen optimally. The grapes are harvested by hand and left to dry in the drying room.
酿酒工艺 The grapes, harvested in boxes, remain in the drying room until December/January. The loss of water, a consequence of the drying period, favours the concentration of all substances in the grapes. Fermentation and maceration take place in small steel vats.
