收获 Usually towards the end of August. Picking decisions are individual for each site. Aldo always gives a few extra days of ripening to this variety, which is a challenging decision at a crucial time, but rewarded by the beauty of the fruit.
酿酒工艺 Cold decanting followed by slow fermentation at a low temperature. Fermentation is stopped by lowering the temperature, and the wine is stored in the refrigerator until bottling.
