Avvoltore is the company’s flagship wine. The grapes are collected from vineyards planted on the “Poggio dell’Avvoltore” hill. Its clay-limestone soil produces a strong and powerful tannic structure. The first vintage was in 1988, the blend has changed very little since then and, in recent years, has always featured these grapes: Sangiovese, Cabernet Sauvignon and Syrah. The name describes the Maremma Falcon, a bird of prey that often flies over these vineyards.

酿酒工艺 | Fermentation in concrete vats, with temperature control and two daily pumping-overs for the first 10 days. The wine remains for a further 15 days in contact with the skins before being drawn off and immediately put into 225-litre barriques, of which 80% are new, where malolactic fermentation occurs. |
陈酿 | It stays in the wood for about a year and is racked during this period. The wine remains in the bottle for six months before being marketed. |
