收获 The grapes, perfectly ripe, a very short time from harvest, are put to cool and then de-stemmed.
酿酒工艺 They are placed in tanks with the skins at a maximum temperature of 5 ° C for about 6-8 hours. This method is called cryomaceration or cold maceration and allows the extract of a bit of colour, which is different at each harvest, and allows the aroma of Pinot Noir grape to be preserved. This is followed by a soft pressing and fermentation in steel tanks at a controlled temperature of about 18 °C.
