The Brut “Il Classico” is the fresh and innovative face of the LungoParma range. Alongside the traditional Charmat, there is room for a Metodo Classico with a more immediate and fragrant profile, aged on the lees for 30 months with a minimum of 6 months disgorgement.

Harvest Start, mid-August. Manual grape harvest in small crates.
Fermentation temperature It never exceeds 15 °C.
Wine making After soft pressing (maximum yield 40%), cold static clarification of the must is carried out. Fermentation of the must takes place in small stainless steel tanks at a controlled temperature that never exceeds 15 °C. Once the first fermentation is complete, the wine is racked into small stainless steel containers where it rests until bottling and re-fermentation in the bottle, according to the Classical method (better known as the Champenoise method).
Aging After disgorging, the liqueur d'expédition, whose recipe is exclusive to this Classical sparkling wine, is added.
