收获 Early August and late September. Manual grape harvesting in small crates.

酿酒工艺 Vinification is done in two stages to allow for an early harvest, rich in acidity, and a second late harvest to obtain a wine rich in alcohol and aromas. Vinification is followed by soft pressing and fermentation in stainless steel containers at a controlled temperature never exceeding 15 °C. Fermentation is preceded by static clarification of the must. After fermentation, a period of maturation on the yeasts follows.
