酿酒工艺 Whole grapes vinified, no SO2 added. Inertisation with a little dry ice. Fermentation in cement vats, with minimal extraction (no pumping over). Early pressing (before the end of alcoholic fermentation), to favour the fruit and limit tannin extraction.
