Gary and Kathy Jordan have been making world-class wines since 1993 on a farm with a history going back over 300 years. He’s a geologist, she’s an economist. 气候 The cooler, southern exposure is home to the most sensitive and aromatic white-skinned grape varieties, as in our Chenin Blanc Timepiece. Altitude: 195 m a.s.l. Exposure: South.

酿酒工艺 The juice was fermented in a combination of oak barrels and clay amphorae. 51% of the juice was fermented in 228 litre French oak barrels and 49% in 400 litre clay amphorae over a period of 6 months. The amphora has the natural ability to keep the lees in constant suspension during fermentation.
