Recioto della Valpolicella Classico DOCG, a sweet passito wine, 12.5% ABV, produced by Negrar - Domini Veneti, 2020 vintage. A wine born from the passion and tradition of Valpolicella, with dried grapes to enhance its sweetness and complexity. Blend: 60% Corvina, 15% Corvinone, 15% Rondinella. Harvested in the last week of September with exclusively manual selection. Drying in a drying room for 100-120 days. Pressing in mid-January with destemming of the grapes. Fermentation at 12° to 23° C. Maceration for 20 days. Manual punching down at a frequency of 3 times a day. Aged in steel for 6 months and in bottle for 4 months. It tickles the nostrils with a fruity aroma of raspberry, black cherry, plum, and prune. It delights the palate with a soft and creamy flavour with notes of dried fruit in the finish.
