The Chianti Classico Riserva Coltassala is the pride of the Castello di Volpaia winery, a company that has been in business since 1966 and is now run with passion by Carlo and Giovannella's family, along with their children Nicolò and Federica. We are located in the Tuscan town of the same name, in the picturesque Sienese hills of the ancient medieval village of Radda in Chianti. It is a magical place, always active in the production of extra virgin olive oil and highly prized wine. It is a still red, made with a blend of 95% Sangiovese grapes and 5% Mammolo. The Sangiovese grape is characterized by its dark red berries and is used in combination with other grapes to produce full-bodied nectars. It is said that its name derives from one of its original areas, Monte Giove, in Santarcangelo di Romagna. The Mammolo grape variety is also a black grape and is widespread in Chianti; the name comes from its distinct violet aroma. The training system is Guyot. The vines from which the Chianti Classico Riserva Coltassala comes grow in loamy and predominantly sandy soils of sandstone origin. After the harvest, strictly by hand and in baskets, the berries are destemmed and gently pressed, then undergo fermentation on indigenous and natural yeasts. In the first phase of fermentation, which takes place in stainless steel tanks at a controlled temperature for 14 days, the must is punched down to obtain an optimal extraction of the most noble and valuable substances. The skins are further macerated for another 10 days; then the malolactic fermentation takes place in Allier oak barriques.

Today, as in the 11th century, the village is intimately involved in the production of wine and olive oil. The fermentation room and wine cellars, the vinsantaia and bottling, and the mill orciaia modern- although very modern, are still housed in the basements, in the halls, desecrated churches and in buildings of the village, joined together by an amazing "vinodotto" underground 'wine pipeline'. 收获 The grapes were harvested entirely by hand and picked into 15-20 kg crates.
酿酒工艺 The grapes are destemmed and very softly crushed. Fermentation took place using indigenous yeasts. The crushed grapes fermented at a controlled temperature of between 27 °C and 30 °C in stainless steel tanks. During the first fermentation phase, which lasted 14 days, two cycles of punching-down per day were carried out in order to have a greater extraction of 'noble' substances from the grapes. After maceration on the skins for a further 10 days, malolactic fermentation was triggered.
