The Coltassala wine has an intense ruby red colour. The nose is elegant and intense, with notes of vanilla, cocoa and fruit in alcohol. It is a wine of great structure destined for long ageing.

| Wine making | The grapes are destemmed and softly crushed. Fermentation took place using indigenous yeasts. The crushed grapes were fermented in stainless steel tanks at a controlled temperature of between 27 °C and 30°C. During the first fermentation phase, which lasted 14 days, two rounds of punching-down per day were carried out to have a greater extraction of 'noble' substances from the grapes. After maceration on the skins for a further 10 days, malolactic fermentation was carried out. |
