酿酒工艺 | The grapes are destemmed and softly crushed. Fermentation took place using indigenous yeasts. The crushed grapes were fermented in stainless steel tanks at a controlled temperature of between 27 °C and 30°C. During the first fermentation phase, which lasted 14 days, two rounds of punching-down per day were carried out to have a greater extraction of 'noble' substances from the grapes. After maceration on the skins for a further 10 days, malolactic fermentation was carried out. |
