Dario works exclusively with traditional methods, does not use selected yeasts, does not filter, does not make adjustments and lets the wine work on the noble lees for a long time without fear of compromising the product. The innate strength of Collio is in his wines, which are characterised by reasonable structure, elegance and impressive precision, despite the "free" style of production.
