Pascal Cotat owns a small domaine in Sancerre, from the traditional and rather limited production but among the most important and authoritative of the area.
The main vineyards of the domaine are both located on the terroir of Chavignol, east of Sancerre and cultivated with Sauvignon Blanc, a native vine of the northeastern region of the Loire, which reaches excellence in these places.
Pascal also owns a small piece of pinot noir that he uses to produce an interesting and almost unavailable rosè. The harvest as well as the entire management of the vineyard is manual and respect for the land is a way of life rather than a style of viticulture for this winery.
The vinification is carried out with soft pressing and with the aim of enhancing the expression of the territory, only indigenous yeasts are used for fermentation. The rest takes place in 600-liter oak barrels, with an average age of 60 years. No filtrations are performed. 阅读更多
