Still white wine, Trentino DOC, 13% ABV, produced by Cavit. 2023 vintage. A Chardonnay Riserva born from the passion and expertise of Cavit, a Trentino cooperative that has been promoting local grape varieties since 1950. The grapes come from the Valle dei Laghi, nestled between the mountains at the foot of the Dolomites, not far from Lake Garda. The harvest was carried out by hand in mid-September. Fermentation took place entirely in very lightly toasted oak barriques, one-third new and two-thirds second and third use, where the wine aged for eight months. On the nose, a light hint of vanilla gives way to aromas reminiscent of peach and exotic fruit. On the palate, it is dry yet supported by a fresh acidity typical of Trentino.

Cavit is a company deeply rooted in the region to which it belongs: Trentino. A small area in the north-east of Italy where the vine, olive tree and Mediterranean-type vegetation live side by side with spruces and larches of the Alpine flora. A land of ancient traditions and culture, where the presence of man, with his villages, castles and cultivated terraces blends in harmoniously with the majestic Alpine landscapes.

The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly.

Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 5,700 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling.

Cavit today is one of the major companies in the wine business, operating successfully at national and international level.The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino.

故事	Chardonnay is among the best-known white grape varieties in the world. In Trentino it is widely cultivated, affecting almost the entire viticultural environment and having in fact found an ideal environment for its needs, albeit with different results depending on the different growing areas. Introduced towards the end of the 19th century by the Istituto Enologico di San Michele all'Adige, it now occupies about one third of the entire Trentino vineyard.

酿酒工艺	After destemming the grapes, the must was left in contact with the skins for 10 hours at a temperature of 10 °C to promote the extraction of aromas.
陈酿	Fermentation took place entirely in oak barriques with very light toasting, one third new and two thirds second and third passage, where the wine was left to age for 8 months before being blended and resting for a few months in a stainless steel tank.
