The castle dates back to the 1500s and is well-known for its excellent location. However, the most significant testimony dates back to 1716, when Grand Duke Cosimo III de' Medici identified the four most suitable territories in Tuscany for producing Quality Wines.
The document, considered the forerunner of modern DOCs, lists the Pomino land along with Chianti, Carmignano and Val d'Arno di Sopra.
Since that date, the wines of Castello Pomino have won many awards: they were awarded in 1873 at the Universal Exhibition in Vienna and in 1878 won the Gold Medal at the Paris Expo, the highest international recognition at the time.
Today, Castello Pomino still stands for Tuscan winemaking tradition, combined with a desire to innovate and expert know-how. Brightness and minerality for a signature Tuscan wine. 阅读更多

收获 | During the cooler hours of the day, the hand-harvested grapes arrive at the cellar in 15 kg crates, where they are slowly and gently pressed, which allows the must to be extracted from the heart of the fruit. |
酿酒工艺 | Once the cuvée is obtained, it undergoes a twelve-hour cold clarification process, a decisive requirement when it comes to creating an exceptional and clear sparkling wine base. After this process, controlled alcoholic fermentation slowly takes place, mainly in stainless steel at 16°C. French oak barriques, a portion of which are new, are used for a small percentage (15-20%) of the wine. |
陈酿 | In the month of March following the harvest, the various cuvées are assembled, followed by the tirage and in-bottle re-fermentation, ageing on the lees for 30 months. The process concludes with remuage and degorgement followed by further ageing in bottles. |
