He is just over 40 years old, he was previously the director of Domaine Pieuré Roch (until 1999), Domaine of Properties of Henri-Frédéric Roch, one of the people who takes care of the Domaine de la Romanée-Conti. Now Pacalet has various plots for rent in various areas of Burgundy, from which it collects the grapes which, vinified with wisdom, go to produce its "natural" wines.
