描述
Chianti Classico Riserva is a still red Tuscan wine with a Controlled and Guaranteed Designation of Origin (DOCG). This wine is the fruit of a grape variety strongly tied to the terroir, grown on medium-fertile clayey soil, in which silt, clay, and sand are present in equal parts. The particular depth of the soil makes the vines particularly resistant to drought. The plants, grown following the guidelines of integrated production, are trained using the simple spurred cordon system and enjoy a continental climate characterized by cold winters with temperatures that drop below zero and rather hot summers that can exceed 40°C, with rainfall concentrated in the months between October and April. The Chianti Classico Riserva from the Brancaia winery is the product of a blend of Sangiovese (80%) and Merlot (20%). The harvest, carried out entirely by hand, covers a period from the second half of September to the first days of October. Subsequently, the grapes, in contact with the skins, undergo fermentation at controlled temperatures ranging from 30°C to 32°C. Alcoholic fermentation lasts for a maximum of 20 days. This is followed by maturation in tonneaux and barriques, half new and half used. The aging phase, lasting 16 months, takes place for the Sangiovese in tonneaux and for the Merlot in barriques. After 16 months, the wine is bottled, and then, before being released for sale, it continues to age in the bottle for a minimum of 8 months. The result is a full-bodied and highly elegant wine.
