收获 The grapes are harvested from low-yield vineyards. The absence of irrigation and a long period of time spent in the vineyard allow for a superb concentration of aromas. The bunches are left to dry naturally to encourage the formation of Botrytis, a noble mould that grows on the skin of the grapes and allows the moisture to evaporate slowly.
酿酒工艺 The whole bunches are left in the press for three days of maceration on the skins. Fermentation begins in steel tanks, with the inoculation of yeasts that promote very slow fermentation, and is completed naturally in small oak barrels.
