Castel del Monte DOC still organic red, 14.5% ABV, produced by Tenuta Bocca di Lupo, 100% Aglianico, 2021 vintage. An intense and elegant Aglianico, an expression of the Apulian terroir. Alcoholic fermentation in temperature-controlled stainless steel tanks, maceration for 15-18 days, and aging in oak barrels. Intense and elegant. Notes of ripe red fruit complement spicy, balsamic hints of vanilla and chocolate. Intense ruby color with magenta highlights. Rich flavor, long finish with vibrant yet never invasive tannins.

酿酒工艺 On arrival at the winery, the grapes were destemmed and placed on a sorting table for further selection so that only the perfect grapes reached the vinification vats. Alcoholic fermentation took place in stainless steel tanks at a controlled temperature of 26-28 °C. Maceration lasted 15 8 days and was managed with punching-down interspersed with délestage and brief pumping-over in order to carry out a gradual and gentle extraction. During this phase, it was decided to remove a large part of the seeds to avoid astringent sensations.
