The Blanquette de Limoux Mademoiselle Margherite is produced by the Antech winery, which since the end of the 19th century boasts a history based on family commitment and respect for the tradition of French cuvées. The know-how has been passed down from generation to generation both in the sparkling winemaking, which allows time to develop its effervescent characteristics, and in the viticulture, which is sustainable and has the least possible environmental impact. Hence the choice to proudly display the "Terra Vitis" certification on the label of each bottle, established in 2013 and synonymous with perfect cohesion between grape variety and terroir. The vineyards are located at almost 400 meters above sea level, and are able to benefit from the freshness of the nearby Pyrenees, from the Mediterranean minerality and complemented by the oceanic vinosity.

Mademoiselle Margherite perfectly respects the traditional version that has led the Blanquette de Limoux to be one of the most renowned cuvées in France and in the world. Blanquette in the Occitan language means small white and is produced with a blend of Mauzac, which represents almost all of it. and the remaining 10% in equal shares between Chardonnay and Chenin Blanc. The grapes are harvested separately, as are the vinification processes, to give the various terroirs the opportunity to express their unique flavor and aroma. Before bottling, the most delicate moment of the process takes place: assembly, in which it is essential to dose the elements in order to obtain, after months of refermentation in the bottle, the perfect sparkling wine.
