We are deeply rooted here in South Tyrol. Our family has a strong connection to wine, particularly to the indigenous grape varieties Schiava and Lagrein. Composición del suelo Sandy soil originating from the disintegration of porphyritic rocks enriched with granite, basalt and gneiss sediments dating back to the Ice Age.
Cosecha Harvested by hand and transported in large crates.
Vinificación Gentle processing by gravity on natural slopes. Maceration time on marc: 6 0 hours. Pressing, natural sedimentation of the must for at least 48 hours at a temperature of 6 °C. Slow, controlled fermentation, decanting until spring arrives. 10% of the grapes are fermented for 3 days with whole berries.
