Retomando esta antigua herencia, un grupo de cualificados empresarios del sector vitivinícola trentino fundó en 1974 la Azienda Spumantistica Cesarini Sforza, con el objetivo de producir vinos espumosos de gran calidad que se hicieran un nombre no sólo entre los consumidores de Trentino, sino también en el panorama nacional. Aging | Followed by refermentation in the bottle. After the addition of the ‘liqueur de tirage’ and the second fermentation (foaming stage), the sparkling wine rests in the bottle for 36 months on its lees before disgorging. The dosage occurs with a little amount of liqueur d'expedition (Brut). |
