The enveloping tannins guide the tasting towards a long and savoury finish. It is ideal for enhancing fresh cheeses, beef dishes or flavourful shellfish risottos.
Where it comes from
This red wine is born from the soils of the vast Alghero estate, reflecting the unique characteristics of the area. The rows are cultivated using the goblet bush vine system. The vines, over half a century old, ensure very low yields that favour an intense aromatic concentration. The vineyards stretch over six hundred metres above sea level, where the significant temperature variations preserve the fruit's fragrance and structural vitality. The synergy between altitude and old vines gives the wine its typical depth and a distinctly balanced character.
How it is produced
The process begins with careful destemming and an extra gentle pressing to maintain the original qualities of the grapes. The subsequent maceration is managed using the délestage technique, essential for optimally calibrating the extraction of colour and polyphenolic components. The process continues with malolactic fermentation to soften and stabilise the palate. The final ageing is skilfully divided between wooden and concrete barrels, with some batches kept in steel, resulting in a glass with lively reflections, pleasant softness and excellent ageing potential.
