What kind of wine is it
San Simone Metodo Classico Zero Dosage Cuvee Blanc de Blancs Riserva is a pas dosé sparkling wine made exclusively from Chardonnay. Produced using the Traditional Method, it is characterised by the complete absence of sugar dosage. In the glass, it displays a fine and delicate perlage introducing notes of white flowers, hazelnut, apple and banana. On the palate, it is pleasantly dry and creamy, supported by pronounced savouriness and a vibrant acidic streak that prolongs its persistence.
Where does it come from
The grapes come from the municipal areas of Pasiano and Porcia. The vineyards, cultivated using the Guyot system, are set on clay-sandy and calcareous soil, a key element in giving the wine its typical freshness. The management of the vines involves low yields to encourage aromatic concentration. The manual harvest usually takes place around the third week of August, ensuring the necessary olfactory cleanliness and the integrity of the acidic structure.
How is it produced
Vinification begins with a gentle pressing of the bunches to extract only the finest free-run must. After maturation in steel tanks and the creation of the blend, bottle refermentation begins, as required by the Traditional Method, with a long period of ageing on the lees at a controlled temperature. This process enriches the wine with pronounced creaminess. The remuage and disgorgement stages take place without the addition of any sugar dosage, followed by a period of rest in the bottle before release.
History and Curiosities
Created to celebrate the centenary of San Simone, this Blanc de Blancs Riserva 2020 is the purest expression of Friulian Chardonnay. The grapes, selected from Pasiano and Porcia, are processed following the strict Traditional Method and matured for 36 months on the lees. This long wait and the absence of dosage enhance a truly authentic Pas Dosé character. After disgorgement in January, the wine rests for a further three months in the bottle, achieving a refined creaminess that pays tribute to the great vocation of the region.

Later on handed over to our parents, Gino and Liviana convinced that to grow and improve we must always be open to change, which gave birth to a new production project: San Simone. An adventure that started from the historical Brisotto cellars, in Prata and later shifted to the new premises in Porcia, where the company accelerated its pace on the road to quality. This project aims to handle with care even a minimum detail, from the vineyard to the bottle.

| Wine making | Produced from Chardonnay grapes sourced from two vineyards, hand-picked and selected, vinified and matured in stainless steel. Gentle and slow pressing of the grapes to extract only the free-run must. The wine remains on the fermentation lees until bottling (in May), then blended into a cuvée shortly before bottling for the secondary fermentation. Refermentation in the bottle with riddling and disgorgement in January without the addition of liqueur or dosage syrup; aged on the lees for 36 months at 12 3 °C and rested in the bottle for a further three months after disgorgement. |
