There are two harvest times for this wine to fulfil different purposes: a first stage to ensure a certain acidity and freshness and a second stage to give the typical full-bodied aroma and flavour to the nose and palate.

We are deeply rooted here in South Tyrol. Our family has a strong connection to wine, particularly to the indigenous grape varieties Schiava and Lagrein. Weinbereitung Gentle "falling" processing. Pressing, sedimentation for at least 48 hours at a temperature of 6 °C. Slow, controlled fermentation. Decanting until the arrival of spring.
