Técnica de elaboración | The distillation of the Nebbiolo marc, dripping with wine, takes place in a state-of-the-art plant in order to preserve all the varietal aromas and fragrances intact. The still used is of the discontinuous, steel type, and inside it the marc is passed through a jet of steam, which carries the alcoholic vapours with it. These, subsequently drawn into the distillation column, produce the distillate, which originally has an alcohol content of 70 - 75 °C. |
Crianza | The grappa is then refined in small barrels (225 litres) of four different types of wood: acacia, juniper, oak and birch. After one year of ageing, distilled water is added until it reaches the alcohol content indicated on the label. |
