End of August. Rosa del Castagno is made only with Syrah grapes grown in our vineyards, all characterized by very low yields per hectare (maximum 40 quintals from 5,000 plants), rigorously selected specifically for this wine, especially before and during the harvest (which usually takes place at the beginning of September, i.e. slightly earlier than the beginning of the harvest of the grapes used to produce our red wines, "Castagnino" and "Il Castagno"), harvested exclusively by hand in small perforated 15 kg boxes. |

Then we carry out a real "white" vinification: after an extremely soft pressing (which leaves the grapes perfectly intact) the grapes are immediately pressed in an equally delicate way, then the must alone is transferred into steel tanks where it ferments at low temperatures (12-16 °C), for about 15 days, without having any more contact with the skins. |
Affinage |
After a short maturation on the noble lees, and a period of natural stabilization and clarification in the cellar, the wine is bottled after sterile filtration. |
