How it is produced
Harvesting takes place in the early hours of the morning to preserve the freshness and integrity of the bunches. In the winery, destemming is followed by a brief maceration on the skins, a crucial step that allows the delicate coppery hue to be extracted before proceeding with gentle pressing. The must undergoes natural cold clarification and is transferred to stainless steel tanks for fermentation at a controlled temperature. Ageing continues in the same containers, where the wine rests at low temperatures, ensuring absolute aromatic precision and preserving the expressive purity of the fruit.
