Description

In the local dialect Burdese means Bordeaux and refers to the classic blend of Cabernet Sauvignon and Cabernet Franc. It is a red wine of great density, structure and balance, produced in limited quantities from selected vineyards. This Burdese is a great wine for ageing that offers various aromas and flavours from the Sicilian sun.

Soil composition Shallow soil, few stones, average limestone; moderate fine texture, with a good fraction of yellow clay. MAROCCOLI: dark deep soil, very few stones, rich of organic materials.

Wine making The grapes are destemmed and crushed, followed by lying on the skins for 21 days. After racking, the wine ages for 14 months in new Allier oak barrels. The malolactic fermentation is carried about in wood and stainless steel vats.
