Where it comes from

The grapes are sourced from the province of Pavia, in a vineyard area located along the forty-fifth parallel. The vines are cultivated using the Guyot training system on medium-textured soils, rich in calcareous marl and gypsum. This particular soil composition encourages a clear expression of the grape variety in its rosé version, ensuring freshness and aromatic precision. The pedoclimatic environment allows for a clean profile, capable of supporting the dry flavour profile and the structural balance typical of this production area.

How it is produced

After manual harvesting, the grapes undergo a gentle pressing to extract only the free-run must. Fermentation takes place with selected yeasts in stainless steel tanks at a controlled temperature. The secondary fermentation follows the Charmat Method in pressurised tanks, with carefully monitored maturation to ensure the highest quality. The process concludes with cold sterile bottling, an essential technique to preserve the fragrance of the fruity aromas and maintain the liveliness of the flavour.
