Bouquet

Suggestive olfactory spectrum that seems to recall the elements of sea and land: salty notes of seaweed and sea backwash combine with humus, cinchona, gentian and officinal herbs. Balsamic puffs and reminiscences of cigar box exalt ripe and crunchy hints of plum and cherry.

Flavour

Silky on the palate, it unravels slowly revealing backbone and an intact texture, with smooth and noble tannins. The finish is long, savoury and balsamic, inviting the new sip.

Ageing After completing malolactic fermentation,the wine matures in 25-hectolitre barrels of Slavonian oak. Bottling normally takes place in August. The Barolo Ginestra Casa Matèthen stays in the binning cellar for 8-10 months before release.
