Allegrini Amarone della Valpolicella Classico 2020
The result of the Allegrini family’s expertise, a true classic of the appellation, this red wine embraces tradition, territory and the know-how of country ways. Corvina, Corvinone, Rondinella and Oseleta are left to air dry until December and checked daily to ensure perfectly healthy grapes. Lengthy refining and ageing finally yield a red wine that has become emblematic of Italian oenology alongside Barolo and Brunello di Montalcino. It has imposing structure and depth, as much in its aromas of mature fruit and spices, as on the palate, where the alcohol is sustained by the right degree of acidity and refined tannins.

Ruby fading to inky shades.

Bouquet

Olfactory emanation calibrated on warm notes of wilted violets, blackberries both ripe and confected, sweet spices and confit tomato that converge towards darker aromas of wet fur, willow bark, Tuscan cigar, cocoa beans and resin.

Flavour

The taste reveals a broad and robust structure that does not yield an inch of elegance and clarity. Moreover, the various components appear fused into each other to compose a precious harmony culminating in a mineral, clear and strong finish.

Pairing

Traditionally enjoyed with game, roasted and grilled meats, casseroles and well-aged cheeses. Excellent with hearty dishes. Amarone’s distinctive flavour compliments exotic sweet and sour cuisine and is therefore also perfect with Asian and middle-eastern dishes.

Soil composition Varied, but mostly clayey and chalky soils of volcanic origin.
Cultivation system The old vines are trained with the "pergola" system; the new vines, instead, are Guyot-trained.
No. plants per hectare Old vines: about 3,000 plants/hectare; the new vines: about 5,000 plants/hectare.
Harvest By hand, the third week of September with a selection of bunches.
Fermentation temperature 8-22 °C (46-72 °F).
Fermentation period 25 days with periodic daily pumping-over.
Vinification Natural over-ripening in the drying room with a 40-45% drop in grape weight. Vinification is carried out with crushing and destemming of the grapes during the first fortnight of January. Fermentation occurs in stainless steel tanks at a controlled temperature.
Ageing In new barriques for 18 months, mass for 7 months and bottle ageing for about 14 months.
