Bright garnet red with light orange reflections.

Parfum

Intense notes of plum and cherry sinuously blend with balsamic nuances of mint, tea leaves, dried flowers and gold-leaf tobacco.

Saveur

The balance between the very fine tannic structure and the fresh, menthol reminescent finish, gives depth and elegance to the wine.

Accompagnements

Ideal with red meat, white meat richly seasoned and mature cheeses; also pairs well with traditional piedmontese first courses like tajarin or agnolotti del plin.

Vinification Vinification on skins: eight/ten days fermentation with floating cap followed by twenty/thirty days maceration with submerged cap; daily pumping over. Malolactic fermentation is carried out in full at a controlled temperature after the alcoholic fermentation.
Affinage In French barriques for twelve months and Slavonian oak casks for twelve more months. Further ageing in the bottle before release.
