How it is produced
The cellar process involves alcoholic fermentation followed by malolactic fermentation, essential for softening and harmonising the palate. The wine is then aged in wooden barrels until bottling, acquiring a sophisticated spicy note of black pepper, cinnamon and vanilla, accompanied by clear mineral hints of graphite. At the table, it enhances intense flavours, proving to be the ideal pairing for tasty pork dishes and mature cheeses.
