What kind of wine it is

Vouette et Sorbée Champagne Fidèle Brut Nature is a Blanc de Noirs produced by Vouette et Sorbée. Crafted using the Champenoise Method, it expresses the essence of Pinot Noir through a rigorous zero dosage profile. The Champagne displays a bright straw yellow colour, enlivened by a fine perlage. The aromatic bouquet weaves together notes of white flowers, currant, morello cherry, dried fruit, brioche and vanilla. On the palate, it is fresh and mineral, developing a dense aromatic texture and a sustained structure, culminating in a long and harmonious finish.

Where it comes from

The grapes originate in the Champagne region within a vineyard ecosystem certified organic and Demeter. The soil is divided between the characteristic kimmeridgian slopes and a fragmented portlandian plateau, giving the wine pronounced energy and mineral tension. The vitality of the land is constantly preserved by a mixed biodiversity that includes fruit trees and pastures. The bunches, from mature vines, are carefully selected through a manual harvest that lasts about three weeks.

How it is produced

The artisanal processes in the cellar begin with pressing in a vertical chestnut press. The decanted musts mature in barrels without any pumping, where the first fermentation occurs spontaneously thanks to the action of indigenous yeasts. After the natural spring malolactic fermentation, the wine rests in the bottle according to the principles of the Traditional Method. Ageing for at least thirty-six months on the lees, combined with manual remuage and disgorgement à la volée, defines an authentic and vibrant Brut Nature.

Champagne Fidèle Brut Nature by Vouette et Sorbée is made exclusively from Pinot Noir grapes, grown on prized Kimmeridgian soils. DEMETER certified, it uses only indigenous yeasts and is aged for 36 months on the lees, ensuring a fine and elegant perlage. Awarded 93/100 by Robert Parker, it offers a fresh and vibrant sip, characterised by delicate notes of white flowers and red fruits. Ideal to pair with refined raw seafood, this Traditional Method enhances the authenticity of the terroir through meticulous manual processes.

Anchored on the grounds of the Upper Jurassic Champagne, the 5 hectares of vineyards have an average age of 21 years. More than 3/4 of the plantations are on Kimmeridgian hillsides, the last quarter is a fragmented plate in pure Portlandian and receives fine pinots (locality Sorbée).

The grape variety, currently dominated by Pinot Noirs, is slowly evolving towards more Chardonnay because of our Chablisian proximity: pedology, climate, fauna, flora, density of plantation, internal surface of clays. All the year we are five to work, helped during the shots by some friends, students, brothers-in-law, family and trainees. The culture is very worried, the composts fermented at the end of the vine, the heavy tractor gone, the fruit trees replanted, the cows tamed, in short ... that happiness!

The domain is certified Organic Farming and DEMETER by Quality France since 1998. Nothing chemical, synthetic zero, only life !!! The picking is manual and spread over about 3 weeks. A traditional vertical chestnut provides pressing. From this stage everything is simple: without pumping, the juices are decanted and go down in the barrels of 400 liters, pieces or leaflets ... to the choice. The fermentations are done thanks to the yeasts present on the berry pruine.

The breeding continues until the spring which will naturally start the malolactic fermentations. Then rest the setting, the foam on slats, riddling on desks, disgorging on the fly, finally the dressing. All cellar operations are done by the people who work the vineyards of the estate in order to be fully aware, involved and proud of themselves.
