Sangiovese Papesse from Villa Papiano is a biodynamic red that authentically expresses the character of the Romagna Sangiovese Modigliana region. This blend of Sangiovese and Uva Rara stands out for its ruby red colour with violet highlights. On the nose, it offers aromas of small red and black fruits, enhanced by delicate floral nuances. On the palate, it reveals an elegant medium body, characterised by a well-integrated tannic structure and a clear fruity profile that leads the sip towards a pleasantly bitter finish. It is a precise-drinking wine, ideal when served at a temperature between 12 and 14°C.

Where it comes from

This wine originates in Emilia-Romagna, on the slopes of Monte Nails, in the heart of the Modigliana area. The vineyards are located at an altitude of 450 metres, in a hilly setting that encourages balanced ripening of the grapes and a harmonious tannic structure. The vines, trained as bush vines and with spur pruning, are managed according to biodynamic farming principles. The roots delve into sandstone soils with clay intrusions, a geological composition that imparts balance and savouriness to the palate. The low yields ensure superior quality, allowing the harvest of fruit that faithfully reflects the Modigliana terroir.

How it is produced

The production process is designed to respect the natural richness of the raw material. Vinification involves fermentation in stainless steel at a controlled temperature, with maceration on the skins for about 18-24 days to ensure gradual extraction of colour and substance. Afterwards, the wine undergoes 6 months of ageing in stainless steel, preserving its aromatic freshness. The process concludes with a 12-month rest in the bottle, an essential stage to encourage tannin integration and define the fruity notes, resulting in a balanced wine with a persistent finish.
