How it is produced
The vinification process begins with a cold maceration, followed by fermentation in steel using a portion of whole bunches. A fraction of the must is set aside and reintroduced before bottling to stimulate the next phase. Malolactic fermentation and a year of ageing take place in wooden barrels, allowing the wine to mature while preserving the fragrance of the fruit. The process concludes with refermentation in the bottle, with time on the lees, which is essential to give the palate its typical and very fine natural effervescence.
