Made from Timorasso grapes, it presents a rich aromatic profile with notes of pear, peach, acacia blossom and hawthorn, enhanced by a delicate hint of honey. Over time, the aromatic range evolves towards fascinating mineral sensations and hints of hydrocarbon. On the palate, it reveals a dry, warm and smooth character, perfectly balanced by a lively acidic tension. The pronounced savouriness accompanies a long finish, making it the ideal companion for white fish dishes and cheeses.
Where it comes from
The grapes come from organically and sustainably farmed vineyards located in the municipality of Monleale. The Colli Tortonesi area features calcareous-clay soils, essential for giving the wine its profound savoury drive and excellent flavour persistence. Thanks to south-east and south-west exposures, the vines receive optimal sunlight. This microclimate encourages full ripening of the bunches, while preserving the vital acidic freshness that characterises the finish.
How it is produced
The process involves a four-week fermentation divided between ceramic vessels, wooden barrels and steel tanks. To preserve the acidic tension of the Timorasso, malolactic fermentation is not carried out. The wine then rests in the same containers for ten months, completing a maturation on fine lees until the following summer. This precise technical choice enhances the structure and smoothness on the palate, harmoniously balancing the wine's distinctive and pronounced savouriness.
